    INGREDIENTS

    • 2 Opal, cored, cut into thin slices
    • 1 bag 5 oz baby spinach
    • 1/3 cup dried sour cherries
    • 3  tablespoons  extra-virgin olive oil
    • 1  tablespoons white wine vinegar
    • 1 tablespoon lemon zest
    • 1/3 cup (about 2 oz.)  crumbled goat cheese
    • 1/2 cup chopped walnuts, toasted

    Spinich Opal Apple Salad
    DIRECTIONS
    • Place spinach in a large bowl; remove long stems and bruised leaves.
    • Whisk together olive oil, vinegar, salt, and ground pepper to taste. 
    • Toss spinach, half of apples and dried cherries with dressing. Top with sliced apples, cheese and walnuts.
